Braised in white wine, tomatoes and rosemary, this chicken is moist and flavorful.
I made this after receiving a bulb of fennel in my organic produce delivery. I used organic chicken, which I brined. I used a red pepper instead of yellow, and a little more garlic and rosemary. I served in a bowl over sauteed red chard, and paired with crusty whole grained bread. This was insanely delicious. One of the top 5 dishes I've ever made!
