Easy Veggie Gazpacho with Cojita Cheese

Serves 2 to 3
Prep Time: 15 minutes
Cook Time: 30 minutes

3 medium tomatoes
1 small onion
1 cucumber
1 green pepper
1 red pepper
2 garlic cloves
pinch of red pepper flakes
2 tablespoons red wine vinegar
1 tablespoon thyme
1 tablespoon basil
1/4 cup olive oil
Cojita cheese, shredded, garnish
Parsley, garnish
Golden or Grape tomatoes, halved, garnish
salt and pepper to taste

Add tomatoes, cucumber, green and red pepper, garlic, onion, red pepper flakes, thyme, basil, red wine vinegar, and s&p to a food processor. Pulse a few times and with the processor running, stream in olive oil. Continue to puree until smooth. Pour gazpacho into a bowl and place in fridge to let it set for at least 30 minutes. When ready to serve pour into smaller bowls and garnish tops with cojita cheese, parsley, and tomatoes.
