Cauliflower Steaks with Fire Roasted Tomato Sauce & Goat Cheese
2 large heads cauliflower, leaves and stem removed
1 tablespoon olive oil
1 15 oz. Muir Glen Fire Roasted Tomatoes
1 tablespoon goat cheese crumbles
A delicious cauliflower-focused recipe topped with a fire roasted tomato sauce and creamy goat cheese.
Preparation & Directions
- Preheat oven to 400 degrees. Spray a baking sheet with non-stick cooking spray.
- Place cauliflower core on a cutting board. Slice 1-inch steaks towards the center of the cauliflower. Depending on the size of the cauliflower, you may only get two good slices. Heat a skillet to medium high heat. Add the olive and saute cauliflower on both sides. Repeat with all four slices. Place steaks on a baking sheet and bake in the oven for about 10 minutes or until golden brown.
- Meanwhile, in non-stick skillet preheated to medium heat, add the tomatoes and warm through. To serve, pour some of the roasted tomatoes onto a plate, place a cauliflower steak on top. Dollop some goat cheese on top of the steak and sprinkle with parsley. Serve immediately.
