Heirloom, Harissa, and Goat Cheese Tarts
1 package store bought pie dough, thawed
2 medium sized heirloom tomatoes, sliced into rounds
4 tbsps mild harissa
fresh thyme, garnish
salt and pepper tot taste

Preparation & Directions
Preheat an oven to 400 degrees.
- Spray a baking sheet with non-stick cooking spray. Roll out pie dough on a floured surface into a large circle. Spread the goat cheese on the tart leaving a one-inch edge for the crust. Top the goat cheese with harissa. Top the harissa with four or five tomato rounds. Sprinkle the tops of the tomatoes with a little salt and pepper. Fold over the edges of the pie dough forming a rustic tart. Brush the pie dough with egg wash.
- Place tart on baking sheet. Bake for about 30 to 35 minutes or until golden brown. Remove from oven to cool. Garnish tops with fresh thyme.
