Ketchup Fried Rice


3 tablespoons vegetable or olive oil

2 scallions, minced

2 cloves garlic, minced

1/2 red pepper, minced

1/4 cup kimchi, minced

3 cups cooked white rice

1/4 cup Muir Glen® Organic Ketchup

Dash of soy sauce

2 eggs, fried (or egg yolks, separated)

Fresh cilantro

Preparation & Directions

  1. In a large skillet or wok over medium-high heat, add two tablespoons of oil. Once hot, add minced scallions, garlic, red pepper, and kimchi. Cook for 2-3 minutes.
  2. Scoop vegetables to the outer part of the skillet and add another drizzle of oil to the center. Add rice and let fry for a minute or two to get it a bit crispy. Stir rice and vegetables together.

  3. Add ketchup and a dash of soy sauce. If rice is very dry, add 1/4 cup of water. Stir together and taste. Adjust to your liking by adding more ketchup or soy sauce.

  4. In a separate skillet, fry two eggs to your liking. Alternatively, you can also just separate two yolks.

  5. Divide the fried rice between two plates and top each serving with a fried egg or the egg yolk. Garnish with fresh cilantro and sesame seeds.
