Mini Pizza Pancakes
2 cups Original Bisquick Mix
2 whole eggs
2 teaspoon Italian seasoning
1/2 teaspoon salt
3/4 cup shredded cheese (pizza or Italian blend)
3/4 cup chopped pepperoni
1 cup Muir Glen pizza or pasta sauce, warmed
Turn a favorite breakfast treat on its head and make easy pancakes with all your favorite pizza toppings!
Preparation & Directions
Heat a griddle or non-stick frying pan over medium heat.
In a large bowl, combine the Bisquick, eggs, milk, Italian seasoning and salt until blended.
Stir in cheese and pepperoni.
Lightly grease pre-heated griddle or pan. Then, add batter, one tablespoon at a time and cook until edges are dry. Turn, then cook until golden.
Serve mini pancakes with warm pizza or pasta sauce on the side for dipping.
