Potato Dill Waffles
1/4 cup plus 1 tbsp of all purpose flour
1 cup thawed shredded potato hash brown
1/2 cup buttermilk
1 tbsp chopped fresh dill
1 tsbp melted butter
4 eggs fried
2 eggs whole
4 slices thick slab applewood bacon, cooked
1 tsp sugar
2 pinches kosher salt
1 pinch ground black pepper
1/2 tsp teaspoon baking powder

Preparation & Directions
In a medium bowl combine the thawed hash browns and butter. Use a potato masher or fork and mash until it is only slightly chunky.
Add in the flour, sugar, baking powder, salt, pepper and chopped dill. Mix to combine.
Whisk the eggs with the butter milk until blended. Pour the buttermilk/egg mixture into the dry ingredients and stir until combined.
Spray your waffle maker with baking spray and preheat according to your waffle iron instruction manual.
