Roasted Tomato, Guacamole, and Hummus Naan Toasts
1 pint grape tomatoes
2 tbsps balsamic vinegar
1 tbsp thyme
2 tbsps olive oil
salt and pepper to taste
2 pieces Naan bread, cut into 2-inch circles, makes about 10 circles
1/2 cup guacamole
1/2 cup plain hummus

Preparation & Directions
- Place tomatoes on a baking sheet. Drizzle tomatoes with balsamic vinegar, 1 tablespoon olive oil, thyme, salt and pepper. Roast for 10 minutes or until golden brown. Remove from oven and let cool.
Place Naan circles on baking sheet. Drizzle Naan with remaining olive oil, salt and pepper. Bake in the oven for 5 to 7 minutes or until golden brown. Remove from oven and let cool.
- To serve: spread about a teaspoon of the hummus on the top of the Naan circle toast. Top the hummus with about a teaspoon of guacamole. Place one or two roasted tomatoes on top and serve. Repeat until all toasts are made and serve immediately.
