1/2 cup unsalted butter
1 large onion, grated
1 tsp dried thyme
1/4 cup all-purpose flour
1 28-oz can Muir Glen® tomato sauce
1/4 cup heavy cream
1/2 tsp kosher salt
1/2 tsp black pepper
Pinch cayenne pepper
Fresh chives as garnish
A rich and delicious vegetarian tomato gravy that goes great on mashed potatoes or ladled over biscuits.
Preparation & Directions
In a medium pot over medium heat, add butter and melt. Once melted, stir in grated onions and dried thyme. Cook until onions are soft, but not browned, about 4 minutes.
Stir in flour and cook until a rough roux is formed, about two minutes.
Slowly stir in Muir Glen® tomato sauce. Add the sauce in 1-cup batches and stir continuously. The gravy should thicken as the sauce warms.
Simmer gravy over medium-low heat for 8-10 minutes to thicken the gravy.
Stir cream into gravy and season with salt, pepper, and a pinch of cayenne.
Continue to simmer gravy until it reaches the thickness you desire. Another few minutes of simmering at this point is usually good. Be sure to stir regularly to prevent scorching.
Serve garnished with fresh chives.
