Roasted Tomato Soup

Ingredient List
  • 1 28 oz can Muir Glen Organic Whole Peeled Tomatoes Small check mark in a circle icon
  • 1 white onion, quartered Small check mark in a circle icon
  • 4 peeled garlic cloves Small check mark in a circle icon
  • 1/2 tsp dried thyme Small check mark in a circle icon
  • 1/2 tsp dried oregano Small check mark in a circle icon
  • A pinch red pepper flakes Small check mark in a circle icon
  • 1 tsp kosher salt Small check mark in a circle icon
  • 1 tsp black pepper Small check mark in a circle icon
Preparation
  1. Halve the tomatoes, reserve the juice.
  2. Place the tomatoes, white onion, garlic cloves, dried thyme, oregano, pinch of red pepper flakes, salt and pepper in a square baking dish.
  3. Roast at 375 degrees F for 35 minutes.
  4. Puree everything in a blender and transfer to a medium saucepan adding the reserved tomato juice and 1/2 cup water.
  5. Warm the soup over medium high heat and sprinkle with Parmesan before serving.
