  • • ¼ cup honey
  • • ½ cup apple cider vinegar
  • • ¼ cup crushed, ground or pureed Muir Glen Organic tomatoes
  • • sea salt
  • • freshly ground black pepper

  1. Heat the honey in a small saucepan over medium-low heat for 5 minutes, until it becomes a noticeably deeper shade of brown.
  2. Add the vinegar and continue to cook, swirling the pan a few times, for about 15 minutes, until the sauce has thickened to the consistency of maple syrup.
  3. Add crushed tomatoes. Bring back up to a boil, then remove from heat and add a good pinch of both salt and pepper.
  4. Or cool to room temperature and serve over a sharp or pungent cheese, like cheddar, blue or goat cheese.
  5. Serve warm over meats, poultry, fish, or roasted vegetables.


Gastrique is an easy classic French sweet and sour sauce that keeps well for weeks in the fridge. Use it as your secret sauce. (Pst, makes a great cocktail!)
